Lighter Mini Peanut Butter Cups:
Ingredients: 1 1/2 cup dark chocolate chips, 1/2 cup PB2 mixture, 1 t confectioner sugar, 1 t coconut oil
1. Melt chocolate chips then add coconut oil.
2. Make PB2 mixture according to directions then add 1 t confectioner sugar
3. Using mini cupcake liners, add ~1 tablespoon of dark chocolate to each liner and refrigerate until hardened.
4. Add a heaping teaspoon of the peanut butter mixture to the center of each liner.
5. Top each cup with a tablespoon of dark chocolate or until peanut butter mixture is covered.
6. Refrigerate until hardened and enjoy! (Keep refrigerated) #healthydessert #sweets #darkchocolate #dessert #pb2
