    LOOK AT THIS BEAUTY!!!! For brekky I had purple oats! Basically just my regular oatmeal base (oats and almond milk) but I added frozen blueberries to it and it turned into this gorgeous purple color! Topped it off with @goodmixfoods blend 11, @sprouts coconut shreds, chia seeds, almond slices, agave syrup, and @wild_friends classic peanut butter! 😍 Also it’s the afternoon rn and I’m just really bad at posting lol. I also did run today because I’m just super tired ugh.     This, my friends, is zongzi (粽子)!! Every region of China makes a different kind of zongzi but the way my mom makes it is with 3 layers — the middle layer has meat or salted duck egg yolk, which is wrapped with a layer of mashed mung beans, which is then wrapped in a layer of glutinous rice! And that’s all wrapped together in bamboo leaves. It’s all seasoned perfectly and it’s sooo good. The ingredients are all raw before boiled and the bamboo leaf is tied super tightly around the zongzi so the rice and beans take in the moisture from the water but can’t expand that much so it’s compacted super super densely which creates this super chewy texture and oh my lawd I love it so much.
