From our last month of posting, you're probably appreciating how much we love ricotta! Its an easy cheese to make, delicious to eat and is very versatile so any amount can be quickly used up in a week. As the seasons are changing, some of our favourite ways to use ricotta at the moment are:
Breakfast: Spread homemade ricotta on toast, top with strawberries and drizzle with honey.
Lunch: Bake ricotta with sun dried tomatoes and basil to add to a lunch platter
Dinner: mix ricotta with spinach and parmesan to make up a fritter. Or make a ricotta gnocchi with a napoli or creamy sauce for a nourishing, hearty meal
Dessert: a baked ricotta cheesecake lighter for the waistline than using cream but every bit as creamy and delicious
